The lesson? Thoroughly cook starchy foods, consume them promptly, and refrigerate leftovers immediately to avoid a fortune turning bad in a hurry.

NAME: Bacillus cereus derives its name from its rod shape and spore-forming ability. "Cereus" comes from the Latin word for "wax", describing its colonies' waxy appearance.

SYMPTOMS: Symptoms typically manifest within 8 hours of consuming contaminated food and may last about 24 hours.

CURE: Stay hydrated by drinking plenty of water.  This disease is usually self-limiting, with the immune system able to fight it off within a day.

HISTORY: Discovered in 1880, Bacillus cereus has been associated with several outbreaks, including widespread cases across Europe in 1950 and an increasing prevalence since 1990.
